Is it safe to move the microSD over to my computer and just delete project files that I don't need anymore?
(I'm assuming there's no way to perform that function directly on NerdSeq, is that correct?)

Absolutely safe!
You can also create maps to sort things out if you like to.

Directory folders.
Structure is like this:
-Firmware
-Projects
|--- can have subfolders
-Samples
|--- can have subfolders

Is there a way to delete projects directly from the nerdseq ?
I can't find this function anywhere or in the manual.

Then it is not there!
And when you are busy deleting them on your computer, make directly a backup :-)
