We used to do this also for Gas-station LED Signs and their PCB's and it is a common thing to do. One thing you definitely should take care of is that you don't spray over or close to the buttons as they could get stuck easily of course. In the end it is plastic sealing your PCB's and it will protect them a bit more than without. It is still now a wonder thing as I think it is difficult if not impossible to cover everything.
